Crispy Kale - quick and easy


My first recipe posting on the new Veggie Nerd!  This recipe is super simple, and intended for a quick healthy snack.  Aside from green smoothies, this is the tastiest use of Kale greens I have found.  Kale is highly nutritious and always a welcome addition to a vegan diet.  Next time you have a group of friends over, bake a nice large pan of crispy kale and watched your friends devour it in minutes!


Preheat oven to 350ยบ F

Tear off the most leafy contoured pieces of kale from the stem.  Place kale in a large baking dish.  It should have high sides for mixing later, though not required.  The kale pieces should be roughly 1.5-2 inches in size and can be fairly close together when cooking.

Bake for 10-12 minutes

The kale will be nice and crunchy.  Immediately drizzle extra virgin olive oil over the kale.  Use as much or as little as you like.  Enough to gently coat the kale.  Next, sprinkle sea salt over the dish.  As before, use as much as desired.  Lastly, mix the kale around in the baking dish with with either your hands or a spatula until coated well in the olive oil and sea salt.

That's it.  Ready to eat.  A nice crunchy salty snack that adds some needed nutrition to any diet.
