Cheap and Lazy College Student - Tofu Garlic Bread


For the last 4 or 5 days my kitchen has been ripped apart waiting for next weeks remodel.  This means that my available counter space is virtually non-existant, and most of my cookware is in boxes throughout the house.  This makes for a difficult time making recipes.  In other words, it will still likely be another week before I have a new recipe posting... though one can dream.  At any rate, here is one example of a quick tasty lunch or dinner amongst the chaos - pan fried tofu on garlic bread.  If I have more time, some steamed veggies are a great addition, or some fruit rounds out this quick meal.  I have had a tofu craving lately, eating it for the last few days.  So delicious!  It reminds me of eggs on toast.  Read on for the rest. pan fried tofu:
1 lbs. extra firm tofu, drained
safflower oil or sesame oil, well coated
1/2 tablespoon Italian seasoning
1/2 tablespoon minced garlic

garlic bread:
Italian peasant bread
olive oil
Italian seasoning
minced garlic

Finishing touches:
Tamari soy sauce

Directions:
Drain the brick of tofu and pat dry with a clean paper towel.  Cut the tofu in thick strips, and set aside.  Heat a medium saucepan with oil until well heated.  Add the garlic and a bit of Italian seasoning.  Let it heat up briefly, then add the strips of tofu; as much as desired.  Cook the tofu on each side, flipping occasionally until each side has browned well. (Note: the image above had soy sauce in the pan, which gave it a darker color. I don't recommend it as the tofu did not get crisp.)  While the tofu is still cooking,  cut the peasant bread in think slices(as desired).  Place the bread on a cooking sheet.  Drizzle with olive oil using a spoon, spread minced garlic pieces on the bread(as desired), and sprinkle Italian seasoning on each piece.  Place under the broiler until crispy and delicious!  Remove from the oven, place tofu slices on each piece, drizzle with a bit of soy sauce, and devour.  While this dish is a bit carb heavy, it's a nice quick meal once in a while that does not involve chopping endless veggies for 20 minutes.
