sauteed onion and egg sandwich


This sandwich has got to be my ultimate favorite.  It takes about 20 minutes tops, and isn't too much food.  Just the right amount.  The key delicious factors involve sautéed onions and an egg over easy.  When you cut into the sandwich the egg yoke covers it in pure awesomeness.  I think that about explains it.  I have been making this sandwich a few times a week and can't seem to stop.  It's worth it every time.

Ingredients:
2 slices bread (your choice)
1 Tbsp olive oil
italian seasoning
black pepper
1 egg (cage free preferred)
sliced tomato
onion slices (4-6 per sandwich)
colby jack cheese (or other)
dijon mustard

Instructions:
Heat up a medium sauce pan over medium low heat until warmed up.  Add roughly a tablespoon of olive oil, dash of italian seasoning, and black pepper.  Once this has heated up, add the onions, flipping after it has been bubbling for a while.  Once cooked until softened, remove the onions.  Next take two slices of bread and place each one in the pan just long enough to soak up the olive oil.  This way, you won't have to add any oil or butter when you cook the sandwich.  Next, add an egg to the pan.  Cook as an egg over easy.  Remove from the pan.

slice of bread
onions
dijon mustard
small square of cheese
tomato
egg
small square of cheese
slice of bread
