Greek Pepper and Artichoke Carbonara


This is a vegetarian italian carbonara, and it's spicy!  A typical carbonara involves lots of butter and bacon, while this one involves neither, yet is equally delicious.

Ingredients:
whole-wheat pasta
chunky tomato sauce
pickled greek peppers
marinated artichokes
mushrooms
1 Tablespoon part-skim ricotta cheese
portebella mushrooms
1 egg
